These “Spanish Deviled Eggs” are somewhat similar to stuff eggs, just that some the ingredients are different. They are very tasty and festive looking, I think a lot of people associate deviled eggs with holiday parties and formal gatherings.

Ingredients:

  • 10 hardboiled eggs, peeled and sliced length-wise
  • 2 tablespoons mayonnaise
  • 2 tablespoon Dijon mustard
  • 1 1/2 teaspoons capers
  • 1 teaspoon fresh parsley, finely minced
  • smoked paprika
Method:

In a small bowl, use a fork and thoroughly mix together the yolks, mayonnaise, mustard, capers, parsley, pepper, and a bit of smoked paprika. Spoon an equal amount into each of the egg halves. Sprinkle with additional smoked paprika and serve.

Do YOU want good food at your holiday cocktail party and still impress people? I’m not suggesting hiring a caterer, nor am I talking about frozen food you’ve in you fridge. Ever think about doing some cooking. The New York Times have made a collection of 101 Simple Appetizers in 20 Minutes or Less that are as easy to eat as they are to make.

4 Toss high-quality crab meat with minced shallots, a little tarragon or a lot of parsley and/or basil, and enough mayonnaise to bind. Also good on lettuce leaves.
5 Mash together best-quality tuna, minced anchovies, minced garlic, chopped oil-cured olives and olive oil as necessary.
6 New York comfort food: Spread cream cheese or crème fraîche on small bagels or bagel chips; black bread is also terrific. Top with sturgeon, sable or lox.

Each appetizer can be served at room temperature and takes 20mins or less. And none require a plate. Most of these recipes are beyond simple, they never do in two steps what can be done in one, and they need to decoration. Have any simple appetizer ideas? Let’s hear ‘em in the comments.

Ingredients:

  • 1 1/2 cup flour
  • 1 cup applesauce
  • 1 cup dark brown sugar
  • 2/3 cup cocoa
  • 1/2 cup shredded coconut
  • 1/4 cup oil
  • 2 teaspoons vanilla
  • 1 teaspoon baking soda
  • 2 teaspoons baking powders
Method:

Preheat oven to 350. Grease and flour or spray an 8×8 inch baking dish. In a large bowl, beat together applesauce, oil, sugar and vanilla. Stir in flour, baking soda, baking powder and cocoa. Beat until well mixed then fold in coconut. Pour into prepared pan. Bake 25 minutes or until a toothpick inserted into the middle of pan comes out clean.

Serves: 4
