Traditional Caribbean Cooking


Ingredients for Plantain Pudding:

  • 1/4 lb flour
  • 1 lb evaporated milk - large
  • 2 ozs margarine
  • 1 coconut
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 2 teaspoon essence (almond or vanilla)
  • 1 tablespoon of grated ginger
  • 6 large green plantains
  • 1/4 teaspoon salt

Method for Plantain Pudding:

Peel plantain, wash and grate on smooth end of grater.
Grate coconut, extract milk, then add to grated plantain.
Add evaporated milk. Add margarine, sugar, spices and essence.
Mix all ingredients, then add flour, ginger, and salt.
Re-mix all ingredients.
Grease deep baking dish. Pour mixture in dish.
Bake at 350F for about 1 hour until liquid is absorbed and pudding is golden brown.
