I use to work at Hotel called the Fort Young Hotel, and this was one of my most favorite cocktail recipes. At the hotel they were called Exotic Fruit Punch. Now I’m not working at the hotel, when some of my friends drop by to visit and I put this together in the blender. They’re dying to know my recipe – well I guess today is their lucky day. Fruit punch (Mele) is refreshing cocktail anytime of the year and great for people on fruit diets.

Ingredients:

  • 1 cup pawpaw slices
  • 1 ripe banana
  • 2 tablespoons honey
  • 2 slices pineapple
  • 1 cup orange juice
  • 1 tablespoon lemon juice
  • 1 tablespoon grenadine syrup
  • 6-8 block of ice-cubes
Method:

Combine fruit, fruit juices, honey and grenadine in blender. Then add ice-cubes and blend until very cold and is well blended. Serve in wide glasses immediately while mixture still holds a head. Finally garnish with a Cherry or a slice on pineapple.

Ginger Beer is hands down one of my favorite beverages of all-time. A lot of people complain about the burning aftertaste, but for me the stronger the better. Ginger Beer is what I a call a real man drink. The secret is to making great ginger beer is to use fresh ginger, plus the addition of the lime or lemon juice. It is a traditional week-end beverage, and is as well a festive season drink.

Ingredients:

  • ¼ lb. Fresh ginger root
  • 1 Lime or Lemon (juice)
  • 3 Whole cloves
  • 1-2 lbs. Sugar
  • Add water (according to taste)
Method:

Remove skin from ginger. Then slice into very thin slices. Put ginger slices into a large pan, add lime juice and cloves and add about 6 cups cold water. Bring to a boil over heat, then lower heat and allow boiling for about five minutes. Remove from the fire and allow it to stand overnight. Then strain and sweeten to taste. If on tasting you find the brew too strong, some cold water may be added to attain the desired strength, which varies with different tastes. Bottle and put one whole clove in each bottle. Cap bottles and allow to stand for about 5 days or until it ripens. Refrigerate and serve when required over ice-cubes.

I’ve to be honest about this recipe. Until a few days ago this was the first time I’ve ever heard of this Carrot Ginger Beer recipe. Well not in Dominica at least; what I know off is Ginger Beer. So, I went ahead and get the recipe a try – here are my thoughts: delicious, every tasty, but depending on the amount of ginger you mix in – your mouth will be literally on fire. So be carefully and enjoy this recipe.

Ingredients:

  • 2 1/4 cups carrot Juice
  • 2 1/4 cups water
  • 1 cup granulated sugar
  • 1/4 cup liquidized ginger
  • 1/4 cup lime juice
Method:

1. Combine all ingredients in a jug and mix well.

Cook Notes:
To liquidize ginger: blend 1/2 cup water and 1 tablespoon ginger root for 1 minute.

Serving Suggestions: Serve over cracked ice. Decorate with lime slices. Serves/Yields: 6
