I’ve to be honest about this recipe. Until a few days ago this was the first time I’ve ever heard of this Carrot Ginger Beer recipe. Well not in Dominica at least; what I know off is Ginger Beer. So, I went ahead and get the recipe a try – here are my thoughts: delicious, every tasty, but depending on the amount of ginger you mix in – your mouth will be literally on fire. So be carefully and enjoy this recipe.

Ingredients:

  • 2 1/4 cups carrot Juice
  • 2 1/4 cups water
  • 1 cup granulated sugar
  • 1/4 cup liquidized ginger
  • 1/4 cup lime juice
Method:

1. Combine all ingredients in a jug and mix well.

Cook Notes:
To liquidize ginger: blend 1/2 cup water and 1 tablespoon ginger root for 1 minute.

Serving Suggestions: Serve over cracked ice. Decorate with lime slices. Serves/Yields: 6

Sorrels are only in season for a short time during Christmas. Once they appear on the food-stands in the market, fresh in bags, snatch them up while you can. They will last frozen or dried all during the year. So Christmas is really the time to enjoy Sorrel Juice. My mom dried some last year, and she was serving Sorrel juice all during the year.
Ingredients:

  • sugar to taste
  • 6 cups of boiling water
  • 4 cups of sorrel petals
  • 1 teaspoon of grated ginger
  • 2 tablespoon of rum (optional)
Method:
First wash the sorrel and put it in a jar. Add the grated ginger. Pour in the boiling water and allow to stand for 2 days.

Finally, strain and add the sugar. You may Add the rum if desired. Bottle. Pour drink over crushed ice.

Makes about 2 jars (375 ml) depending on how concentrated.

Ingredients:

  • 2 1/2 oz. BELLO concentrate
  • 2 1/2 oz. White Rum
  • 1 tbsp. BELLO Lime juice with pulp
  • 1 dash Bitters
  • 1 oz. Orange juice

Blended together …… Topped with a Cherry.
