Ingredients:

  • 1 clove garlic. Crushed
  • 2 cups ¼ fresh bread squares
  • ¼ cup grated parmesan cheese
  • ¾ cup olive oil
  • 1 teaspoon salt
  • 1 egg
  • ¼ cup crumbled blue cheese
  • 1 tablespoon Worcestershire sauce
  • ¼ teaspoon pepper
  • ¼ cup lemon juice
  • 1 large head iceberg lettuce
  • 1 head leaf lettuce

Method:

About 4 hours before serving time, crush garlic and drop into ¼ cup oil and set aside. Toast bread squares in shallow pan at 300F for about 20 minutes until crisp and dry. Tear lettuce into bits and put into salad bowl and refrigerate. Just before serving, sprinkle lettuce with cheese and drizzle one mixture of ½ cup olive oil, Worcestershire sauce, salt and pepper. Toss gently break raw egg into salad, add lemon juice and toss until egg specks disappear. Now pour remaining ¼ cup oil over bread squares, toss and sprinkle over salad. Toss salad and serve immediately.

I adore papaya and Avocado – it’s probably become one of my favorite salads of all time – Avocado and Papaya both has this wonderful creamy texture and is not too sweet but not at all bitter. I love eating this recipe as a snack or as a side salad to my favorite dishes. Avocado and Papaya is definitely a winning combination. The colors are beautiful and the flavors are simple. This is what makes this recipe great. Let’s hear your comments.

Ingredients:

  • 2 avocados, peeled, halved and pitted
  • 2 papayas, peeled, halved and seeded (I don’t know what papayas are like where you live, but the ones down here in Caribbean are not so big! I needed two for this recipe – the key here is to have equal amounts of avocado and Papaya).
  • 1 lime, zested and juiced
  • ½ tsp salt
  • ¼ tsp sugar
  • 1/8 tsp freshly ground black pepper
  • 1/8 tsp cayenne
  • ¼ cup extra virgin olive oil (good quality)
Method:
Slice the avocado lengthwise into ½ inch slices. Slice the papaya width-wise into ½ inch slices. Arrange slices overlapping and alternating on a platter.

In a small bowl combine remaining ingredients and stir to combine. Spoon the dressing over the avocado and papaya and serve immediately.

Serves: 1
