I adore papaya and Avocado – it’s probably become one of my favorite salads of all time – Avocado and Papaya both has this wonderful creamy texture and is not too sweet but not at all bitter. I love eating this recipe as a snack or as a side salad to my favorite dishes. Avocado and Papaya is definitely a winning combination. The colors are beautiful and the flavors are simple. This is what makes this recipe great. Let’s hear your comments.

Ingredients:

  • 2 avocados, peeled, halved and pitted
  • 2 papayas, peeled, halved and seeded (I don’t know what papayas are like where you live, but the ones down here in Caribbean are not so big! I needed two for this recipe – the key here is to have equal amounts of avocado and Papaya).
  • 1 lime, zested and juiced
  • ½ tsp salt
  • ¼ tsp sugar
  • 1/8 tsp freshly ground black pepper
  • 1/8 tsp cayenne
  • ¼ cup extra virgin olive oil (good quality)
Method:
Slice the avocado lengthwise into ½ inch slices. Slice the papaya width-wise into ½ inch slices. Arrange slices overlapping and alternating on a platter.

In a small bowl combine remaining ingredients and stir to combine. Spoon the dressing over the avocado and papaya and serve immediately.

Serves: 1

Ingredients:

  • 3 lbs cooked dasheen
  • 1 cup mayonnaise
  • 3 tbs. vegetable oil
  • 6 seasoning peppers, green and red
  • 3 sprigs parsley
  • 2 sprigs chive
  • 2 medium onions
  • 1 dash seasoning powder
  • 2 cloves garlic
  • 3 tbs. vinegar
  • 10 green olives sliced thin

Method:

Dasheen should have been very well cooked, cooled and chilled to make dicing easier.
Dice in small cubes
Garlic should be crushed fine and all other seasoning cut very fine.
Combine all seasoning in oil and vinegar and spoon into dasheen mixing very well.
Add mayonnaise and mix.
Spoon into serving platter adding green olives as you go along.
