Traditional Caribbean Cooking


Ingredients

  • 2 cups grated green pawpaw
  • Grated rind of 1 lime
  • 2 tsp. lime juice
  • 1/2 cup water
  • 1 cup granulated sugar dash of green colouring

Method

Put pawpaw into a saucepan and cover with water. Boil, cool strain of water.
Press pawpaw to squeeze out all water
put sugar and the half cup of water into the saucepan, boil till thick, stir pawpaw, lime juice and lime rind, boil again for 2 mins, stirring constantly. Remove from heat, stir in the colouring, cool slightly. Take up mixture by spoonfuls, roll into balls, then roll in fine sugar, put on a plate to dry
