Traditional Caribbean Cooking


Ingredients for Plantain Pie:

  • 8 green plantains
  • 3 tablespoon mayonnaise
  • 1/4 cheese (grated)
  • 1 small evaporated milk
  • l large onion
  • 1 clove of garlic
  • 2 teaspoon chopped parsley
  • 2 teaspoon chopped celery

Method for Plantain Pie:

Peel plantains, wash then cook until very soft. Drain water.
Mash cooked plantains in a mortar until very smooth.
Place mashed plantains in a bowl, then add all seasonings.
Combine mayonnaise, grated cheese, and milk.
Mix all ingredients together.
Place in a well-greased large deep Pyrex dish.
Top with bread crumbs and a few sprinkle of grated cheese.
Bake for 15 minutes until golden brown.
