If you’re a huge fan of heavy desserts, consider making a trifle for your next dinner party. A cold dish that is best when it is made in advance. Ingredients:

  • 1 sponge cake (2 days old)
  • ¼ cup sherry
  • 1 small can fruit
  • 1 ¼ cups milk
  • 1 coconut (milk only)
  • 2 tablespoon sugar
  • 1 teaspoon Vanilla
  • 1 teaspoon butter
  • 2 egg whites
  • 1 tablespoon sugar
  • 2 tablespoons chopped cashew nuts
  • Strawberry jam



Method:

Cut sponge cake into thins slices and spread jam over each slice. Place in bottom of dish with jam side facing up. Sprinkle with sherry, cover and refrigerate. Make custard with milk, butter and sugar in a saucepan over heart. Add vanilla. Soften custard powder with a little cold water and add to heated milk stirring until thickened. Cool and pour over cake slices. Drain fruit and spread over custard. Chill for 2-3 hours. In the meantime grate coconut and extract milk through clean cloth by squeezing small quantities of coconut at a time. Pour milk over trifle and refrigerate for another 2 hours. Whip egg white until stiff; gradually add sugar (1 tablespoon) beating until well blended. Gently spoon over trifle and sprinkle with chopped nuts and serve.

There are many ways to make delicious scalloped potatoes in the Caribbean, in my case I like keeping things simple. Basically you layer thin slices of potatoes with any number of extras – like cheese, parsley, onions - then add some milk or cream and bake.

Recommend: If you need a faster cooking time, Joy of Cooking recommends parboiling the potatoes first for a few minutes.

Use a shallow casserole dish - you don’t want is crispy browned on top and not-cooked-enough inside.

Ingredients:

  • 4-5 Potatoes
  • 2 cups milk
  • ½ lb. grated cheese
  • salt, pepper
  • 1 larger onion sliced
  • ¼ lb. flour
  • 1 tablespoon margarine

Method:

Peel, slice and soak potatoes in lemon juice and salt water for 1 minute or so. Dry potato slices well and set aside. Grease casserole dish generously. Then place layer of potatoes, and sprinkle layer with cheese, pepper and a little flour. Place several onion slices on top. Continue this process until all potato slices and other ingredients are finished. Then put a very generous coating of grated cheese on top. Dot with butte, and pour milk into casserole until potatoes are covered. Bake in pre-heated oven at 350F for about 45 minutes or until liquid in absorbed.

Passion Fruit now in my list of favorites: you can make very easy and quick a natural juice, which is not only tastes wonderful, but also very useful. For to prepare passion fruit juice you do not need (as for many other exotic fruits) to torment to clean the skin or squeeze a juice.

Passion fruit has oval shape with thick yellow skin (or in some places of the world it is violet), which is enough to pierce by the end of sharp knife on 2-3 centimetres and then easily to turn across the diameter of the fruit, dividing passion fruit on two halves. Inside it will be yellow sweet and sour gruel and seeds.

Scrap by spoon to any convenient deep dish, add sugar to taste (I usually do 4-5 tbsp sugar to 4-5 passion fruits) and blend or mix well with a fork.

Then add three or four cups of water (liquid should be juicy-amber colour) and mix well (or use blender). Strain the seeds through a sieve to the juice jar and squeeze well seeds with pulp. Try to taste the juice, and if necessary - add sugar. The whole process takes literally two or three minutes.

What is useful

  • The fruit flesh contains: water, proteins, carbohydrates, fibre, calcium, phosphorus, iron, vitamins Group B, A, C, sodium, serotonin.
  • Passion Fruit has laxative properties and improves bowel work. Contribute removal from the body of uric acid and is ANTIPYRETIC means. Recommended use in diseases of liver, urinary tract.
  • Biochemists and cosmetology often use extracts and oils marakuyi that have moisturizing, regenerating, rich vitamins action, well restore hydro mantle, stimulate local circulation.
  • Also, as a result of new studies published in the journal Nutrition Research, found that extract of passion fruit with purple skin, helps get rid of heavy wheezing cough among patients with asthma and reduce blood pressure.

Passion Fruit usually used:

  • for the manufacture of juices, cocktails, syrups, jams and jams.
  • as for flavoured yoghurts, cakes, pastries, in ice cream.

Passion fruit season in Dominica is usually around May-June.
