I have to honestly say that only started eating eggplant just over a year ago. My girlfriend at the time introduced to it, and ever since I’ve been really be craving eggplant and looked forward to trying it new ways. I love this version on stuffed eggplant as much as I did spicy grilled eggplant with green pepper and parley- the dish that started my eggplant craze. Try this recipe; it’s quick and simple vegetarian meal for those always on the go.

Ingredients:

  • 2 eggplants
  • 1 onion, chopped
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • ¼ teaspoon thyme
  • 1 pinch garlic powder
  • 2 tablespoons breadcrumbs



Method:

Cut eggplants in two, lengthwise. Then cook in salted water until tender. In a bowl, scoop out flesh, leaving for filling. Crush eggplant; add seasonings and spoon into skin shells. Sprinkle with breadcrumbs. Bake in hot oven 325F for about 10 minutes. Serve hot.

sweet_potato_pudding

This sweet potato pudding recipe is an old time recipe my great aunt use to make every the summer time. I remember this like it was yesterday – I use to run to my aunt house as soon as school was closed for the summer knowing that she a batch of sweet potato pudding just for me. Luckily, she was able to past on the recipe before passing away to my mom. Every so often my mom cooks up a batch of this delicious sweet potato pudding. Thanks aunt val – Rip!

Ingredients:

  • 3 medium sweet potatoes (grated)
  • 1 tablespoon grated ginger
  • ½ cup brown sugar
  • 2 teaspoons vanilla extract
  • 1 cup coconut – fresh grated
  • 2 tablespoons butter or margarine
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 1 cup milk



Method:

Peel, wash and grate potatoes. Grate coconut and combine with sweet potato. Add butter, ginger, sugar, and spices. Mix well. Add milk, mix again and pour into greased baking dish. Bake at 350F for about one hour, or until all the liquid is absorbed and pudding is golden brown.

I use to work at Hotel called the Fort Young Hotel, and this was one of my most favorite cocktail recipes. At the hotel they were called Exotic Fruit Punch. Now I’m not working at the hotel, when some of my friends drop by to visit and I put this together in the blender. They’re dying to know my recipe – well I guess today is their lucky day. Ingredients:

  • 1 cup pawpaw slices
  • 1 ripe banana
  • 2 tablespoons honey
  • 2 slices pineapple
  • 1 cup orange juice
  • 1 tablespoon lemon juice
  • 1 tablespoon grenadine syrup
  • 6-8 block of ice-cubes
Method:

Combine fruit, fruit juices, honey and grenadine in blender. Then add ice-cubes and blend until very cold and is well blended. Serve in wide glasses immediately while mixture still holds a head. Finally garnish with a Cherry or a slice on pineapple.
