Traditional Caribbean Cooking


Ingredients:

  • 500 g (1 lb 2 oz) cassava
  • 1 egg, beaten
  • 50 g (2 oz) margarine
  • 15 ml spoon (1 tbsp), baking powder
  • salt and white pepper to taste
  • little flour for coating
  • oil for frying
Method:
Put cassava in a saucepan of water to cover. Bring to the boil and cook, to covered, for about 20-30 minutes. Drain and mash in a large bowl.Add egg, margarine, baking powder, salt and pepper. Blend well.
Shape mixture into small balls.Heat oil in a frying pan. Toss balls in flour and fry until golden brown.

Drain on absorbent paper, serve hot.
The same method may be used for eddoes, tannias and hard yams.

Serves 8.
